4 strips bacon, cut into 1 inch pieces
1 large onion, finely chopped
1 green bell pepper, seeded and finely chopped
5 cans gluten free pork and beans
1/2 cup firmly packed brown sugar
1/2 cup ketchup
1/4 cup yellow mustard
1. Preheat Oven: Preheat oven to 375 degrees.
2. Cook Bacon: In a large cast iron skillet, cook bacon until nearly crisp, stirring often, about 5 to 7 minutes.
3. Add Onion & Pepper: Add onion and pepper and cook until onion begins to soften, about 5 more minutes.
4. Add Remaining Ingredients: Add beans to the skillet and stir to combine. Add ketchup, mustard and brown sugar and stir gently to combine. Bring to a boil.
5. Bake Beans: Remove skillet from heat and transfer to the hot oven. Cook until beans are thick and bubbly, about 35 to 45 minutes.
6. Serve & Enjoy: Serve hot or allow to cool for a bit before serving. Enjoy!
