1 cup white basmati rice, soaked in water 15 minutes and drained well
1 3/4 cup water
1 Tablespoon lemon zest and 1/4 cup fresh lemon juice from 2 lemons
1 teaspoon kosher salt or 1/2 teaspoon table salt
1. Make Rice: Bring water, lemon juice and salt to a boil in a medium saucepan. Add rice, stir will to combine and return to a boil. Continue to cook on medium-high heat until most of the water is absorbed, about 10 – 12 minutes. Place lid on saucepan, reduce heat to a low simmer, and continue to cook rice until all water is absorbed, about 10 more minutes.
2. Stir in Zest: Pour rice into a bowl and fluff with a fork. Add zest and toss to combine. Enjoy!
