Serves 4
3 Tablespoons roasted/toasted sesame oil
3 Tablespoons Tamari gluten free soy sauce
2 Tablespoon rice vinegar
1 clove garlic, minced
1 head broccoli, cut into florets
3/4 pound fresh shitake mushrooms, stems removed
salt and fresh ground black pepper
1. Preheat Oven: Place rack in middle position and preheat oven to 450 degrees.
2. Make Marinade: In a medium bowl, whisk sesame oil, tamari, rice vinegar and garlic together to combine.
3. Marinate Vegetables: Add broccoli and mushrooms to bowl and toss to coat. Season with salt and pepper. Let veggies marinate 10 minutes, stirring a few times to distribute marinade.
4. Roast Vegetables: Pour mixture onto baking sheet and spread into an even layer. Roast until vegetables are tender, about 20 minutes, stirring vegetables after 10 minutes.
5. Finish & Serve: When broccoli is fork tender, remove from oven. Serve hot. Enjoy.
