simple shallot rice pilaf with herbs

Total Time: 45 minutes

1/4 cup unsalted butter or olive oil
1/2 cup minced shallot or onion
1 teaspoon kosher salt
1 1/2 cups long grain white rice, jasmine rice or basmati rice, rinsed well and drained
2 1/2 cups water or reduced sodium chicken broth or water

1. Saute Shallot: In a large saucepan over medium heat, melt butter. Add shallot and salt and cook until shallot is soft, about 3 minutes, stirring often.

2. Saute Rice: Stir rice into saucepan. Saute, stirring often, until the edges of the rice begin to change color, about 3 more minutes. Transfer rice to rice cooker pot.

3. Add Water: Add water to rice cooker. Cover and set to cook for white rice

4. Finish Rice: Let rice rest for 10 minutes, covered. Season with salt and pepper to taste. Enjoy!
