simple shallot rice pilaf with herbs

Total Time: 45 minutes

1/4 cup unsalted butter or olive oil
1/2 cup minced shallot or mild onion
1 teaspoon kosher salt
1 1/2 cups long grain white rice or basmati rice, rinsed well and drained
2 1/2 cups water or reduced sodium chicken broth
2 Tablespoons minced fresh parsley

1. Saute Shallot: In a large saucepan over medium heat, melt butter. Add shallot and salt and cook until shallot is soft, about 3 minutes, stirring often.

2. Saute Rice: Stir rice into saucepan. Saute, stirring often, until the edges of the rice begin to change color, about 3 more minutes.

3. Add Water: Add water to saucepan and bring to a boil. Cover, reduce heat to a low simmer.

4. Cook Rice: Cook rice until it is tender and all water has been absorbed, about 20 minutes.

5. Finish Rice: Let rice rest for 10 minutes, covered. Just prior to serving, add parsley to rice and stir to combine. Season with salt and pepper to taste. Enjoy!
